Warhammer 1, 2 and 3 will all be self contained, but if you want to play one super huge world conquest campaign with every faction from the entire franchise, you'll want all three games. But, there is also a combined 'grand campaign' called 'mortal empires' that requires you to own each game in the series. You will absolutely get your money's worth with just warhammer 2 on own.
